This dish is very quick and simple to construct, the reason for the 1 hour cook time is taking into consideration the time to roast the beets if you aren’t buying them precooked.
Here is now to roast your beets:
- Preheat your oven to 400°F (200°C).
- Wash the beets thoroughly and trim off the stems and roots.
- Place the beets on aluminum foil and drizzle them with olive oil. You can also season them with salt and pepper if desired.
- Wrap each beet individually in the aluminum foil ensuring they're tightly sealed and place of baking sheet.
- Place the baking sheet in the oven and roast the beets for about 45-60 minutes, depending on their size. They're done when they're tender and easily pierced with a fork.
- Once roasted, let the beets cool slightly before handling. Then, use a paper towel to rub off the skin—the skin should easily peel away.
- Slice or chop the roasted beets as desired.

- * 1 piece of burrata
- * 1 medium beet, roasted, chilled, and diced
- * 1 orange, segmented and chilled
- For the dressing:
- * 2 tablespoons extra virgin olive oil
- * Juice of 1 lemon
- * Juice of 1 orange
- * 1 tablespoon honey
- * 2-3 fresh basil leaves, finely chopped
- * Salt and pepper to taste

- 1. Begin by preparing the dressing. In a small bowl, whisk together the olive oil, lemon juice, orange juice, honey, chopped basil, salt, and pepper until well combined. Set aside. You can prepare the dressing ahead of time and place in the refrigerator so it’s nice and cold when serving.
- 2. Place the burrata on a serving plate.
- 3. Arrange the roasted beet pieces and orange segments around the burrata.
- 4. Drizzle the prepared dressing over the burrata, beets, and oranges.
- 5. Garnish the salad with torn basil leaves for added freshness.
