Roasted Beet Ricotta Toast

Notes
This recipe is about enough ricotta cheese for about 6 thin slices of bread like the ones I use. If you plan on making more, you will have to adjust the ricotta mixture accordingly.
Also, the reason that the cook time on this is so long is because of the heart shaped beet chips. They are absolutely not necessary and are just something I added for a little Valentine's Day twist. If you eliminate them they are not time consuming at all.
I used a ziplock bag to pipe out the ricotta onto the toast, but that was only to make it more visually appealing. If you don't feel comfortable doing that, you can absolutely use a spoon to spread it on the toast.
Ingredients
- 2 beets
- Olive oil
- Salt and pepper
- French bread
- 1 cup ricotta
- 2 tablespoons beet puree
- Honey, to taste
- Zest of 1 orange
- 1/2 cup pecorino Romano (optional)
- Fresh basil, chopped
- Pinch of salt
- Pistachios, chopped
- Extra basil for garnish
- Optional: Honey or balsamic glaze for drizzling
Instructions
- Preheat the oven to 400 degrees Fahrenheit. Wrap the beets in tin foil, drizzle with olive oil, and roast for 50 minutes. Let them cool.
- For beet chips, cut thin slices, then punch out hearts with a heart-shaped cookie cutter. Coat with olive oil, salt, and pepper, then bake at 350 degrees for 15-20 minutes.
- Cut french bread on a dramatic angle to create long strips. Crisp up French bread in a pan with olive oil.
- Combine ricotta, beet puree, honey, orange zest, pecorino Romano (optional), chopped basil, and a pinch of salt. Mix with a hand mixer until smooth. If you don't have a hand mixer you can use a whisk or a spoon.
- Assemble the toasts by spreading the ricotta mixture on the crisp bread. Top with, chopped pistachios, thinly sliced basil, and then your heart-shaped beets chips!
- Optional: Drizzle with honey or balsamic glaze for added flavor.
