Ingredients
- * 3 lbs small potatoes, sliced into somewhat thin slices
- * 1/4 cup olive oil
- * Salt and pepper, to taste
- * 7 oz. Gorgonzola cheese
- * 1/2 cup heavy cream
- * 1/4 cup water
- * Balsamic glaze, for drizzling
- * Optional: fresh parsley or chives for garnish
Instructions
- 1. Preheat your oven to 425°F (220°C).
- 2. In a large bowl, toss the sliced potatoes with olive oil, salt, and pepper until evenly coated.
- 3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- 4. Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden and crispy, flipping halfway through cooking for even browning.
- 5. While the potatoes are roasting, prepare the Gorgonzola sauce. In a saucepan over medium heat, melt the Gorgonzola cheese.
- 6. Once the cheese has melted, add the heavy cream and stir until well combined.
- 7. Gradually add the water to the sauce, stirring constantly, until you reach your desired consistency. Let it simmer for a minute or two to thicken slightly.
- 8. When the potatoes are done, remove them from the oven and transfer to a serving platter.
- 9. Drizzle the roasted potatoes with the Gorgonzola sauce.
- 10. Finish by drizzling balsamic glaze over the potatoes and sauce.
- 11. Garnish with fresh parsley or chives, if desired.
