One of my favorite warm weather food combos is tomato and mozzarella. This Caprese toast is the perfect choice for a light lunch or gathering with friends.

Ingredients
- * 1 Tuscan loaf or any rustic bread
- * Olive oil
- * Fresh mozzarella, sliced
- * Ripe tomatoes, thinly sliced
- * Salt and pepper to taste
- * Fresh basil leaves
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Slice pieces of Tuscan loaf or rustic bread to your desired thickness.
- 3. Brush both sides of the bread slices lightly with olive oil.
- 4. Place the bread slices on a baking sheet and toast them in the preheated oven for about 5-7 minutes, or until they are lightly golden and crispy.
- 5. Remove the toasted bread slices from the oven and let them cool slightly.
- 6. Once cooled, place slices of fresh mozzarella on top of each bread slice.
- 7. Arrange thinly sliced tomatoes on top of the mozzarella.
- 8. Drizzle a little more olive oil over the tomatoes and mozzarella.
- 9. Season with salt and pepper to taste.
- 10. Garnish each toast with fresh basil leaves.
