Fried Eggplant and Ricotta Pizza

Have fun when you make this pizza and don't worry so much about the measurements. I always say you should add more of whatever you love the most. If you want it extra cheesy don't be afraid to add more mozzarella. If you like ricotta, load it up. It's all up to you!
Ingredients
- Pizza dough from your favorite pizzeria
- 1 cup crushed tomatoes
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 medium eggplant, peeled and sliced into quarter-inch rounds
- Salt
- 2 eggs, beaten with a splash of water
- 1 cup breadcrumbs
- Olive oil, for frying
- 1 cup fresh mozzarella, sliced or torn into pieces
- 1/2 cup ricotta cheese
Instructions
- Prepare the simple tomato sauce: In a small bowl, mix together the crushed tomatoes, minced garlic, and Italian seasoning. Set aside.
- Prepare the eggplant: Lay out the sliced eggplant on paper towels and sprinkle them lightly with salt. Let them sit for about 15 minutes to draw out excess moisture. Pat them dry with paper towels.
- In one bowl, beat the eggs. In another bowl, place the breadcrumbs. Dip each eggplant slice first into the beaten eggs, then into the breadcrumbs, coating evenly.
- In a skillet, heat olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown and crispy on both sides. Place them on paper towels to drain any excess oil.
- Preheat your oven to 450°F (230°C).
- Roll out the pizza dough on a lightly floured surface to your desired thickness. Carefully transfer the rolled-out dough to the pizza stone.
- Spread the prepared tomato sauce evenly over the pizza dough, leaving a small border around the edges.
- Arrange the fresh mozzarella slices or pieces evenly over the sauce.
- Place the fried eggplant slices on top of the mozzarella.
- Using a spoon, dollop the ricotta cheese evenly over the pizza.
- Place the pizza to the preheated oven and bake for 18 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
- Remove the pizza from the oven and let it cool for a few minutes before slicing and serving.
