This is another dish that my Grandma always made. They are so easy to make. Roasted to golden perfection, each bite is a combination of crispiness on the outside and fluffiness on the inside.
Italian Roasted Potatoes

Ingredients
- 2 pounds potatoes, rinsed and dried
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
- Optional: Freshly grated Pecorino Romano for serving
Instructions
- Preheat the oven to 400°F (200°C).
- If the potatoes are large, cut them into smaller chunks. Leave small potatoes whole or cut in half (as I did).
- In a bowl, toss the potatoes with 3 tablespoons of olive oil, minced garlic, and chopped fresh rosemary until evenly coated.
- Season with salt and pepper to taste.
- Spread the potatoes on a baking sheet in a single layer.
- Bake in the preheated oven for about 30-40 minutes or until the potatoes are golden brown and crispy, turning them halfway through for even cooking.
- Optional: Sprinkle freshly grated Pecorino Romano before serving.
