This dish was inspired by one that my husband ordered in Florence. He couldn’t stop talking about how good it was, and so I thought, why not try and recreate it.
Kale Pesto Pappardelle with Italian Sausage

I save a little bit of pasta water, that way if the mixture seems dry, you can add a little to get it to the consistency you are looking for.
The measurements are approximate. When I cook, I go by feeling. Don't be afraid to put more of what you love and less of what you don't. For example, if you love garlic, add more garlic. You can't go wrong.
Ingredients
- 1 lb. Italian ground sausage
- 2 cups kale, stems removed
- 1 tsp crushed red pepper flakes
- 3 cloves garlic, whole
- 1/2 cup extra virgin olive oil
- Salt and black pepper to taste
Instructions
- Brown sausage breaking into small pieces and set aside.
- In a blender, add garlic, red pepper flakes, kale, and olive oil. Blend.
- Add pesto to pan with cooked sausage.
- Add cooked pasta and mix.
- Now it’s ready to serve. Add some grated Pecorino Romano for an extra punch of flavor.
