Ingredients
- 1 pound pasta of your choice
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 large onions, finely chopped
- 2 tablespoons Worcestershire sauce
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh parsley, chopped (for garnish)
- Grated Pecorino Romano cheese (for topping)
Instructions
- Cook the pasta according to package instructions until al dente.
- In a large skillet, heat olive oil and butter over medium heat. Sauté onions until golden brown and caramelized. This could take about 30 minutes.
- Add Worcestershire sauce to the onions, stirring well to combine the flavors.
- Pour in broth and let it simmer for a few minutes.
- Blend to create onion purée and add back into the skillet, season with salt and pepper to taste.
- Pour in the heavy cream, stirring continuously until the sauce thickens.
- Combine the cooked pasta with the creamy onion sauce.
- Garnish the dish with fresh chopped parsley and generously sprinkle grated Pecorino Romano cheese on top.
