This is a pasta dish that my Grandma always made. It is packed with flavor and is so easy to make. Over time (if there is any left) it gets even better as all the flavors meld together!
Penne Pasta with Tomatoes and Black Olives

Ingredients
- 1 pound (16 ounces) penne pasta
- 4 cloves garlic, minced
- 1/4 cup olive oil, plus more for drizzling
- 4 medium tomatoes, chopped
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Grated Pecorino Romano cheese for serving (optional, but definitely recommended)
Instructions
- Cook the penne pasta (or pasta of your choice) according to package instructions in a large pot of salted boiling water until al dente.
- In a large skillet, heat 1/4 cup of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the chopped tomatoes and sliced black olives to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes have softened and released their juices. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet along with the chopped fresh parsley. Toss everything together until well combined. Drizzle with additional olive oil to create a saucier consistency, if needed.
- Serve the penne pasta with grated Pecorino Romano cheese (optional) on top for added flavor.
