Shrimp Scampi with Angel Hair

Ingredients
- * 1 pound angel hair pasta
- * 1 pound large shrimp, peeled and deveined
- * 4 cloves garlic, minced
- * 1/2 teaspoon red pepper flakes (adjust to taste)
- * 1/4 cup olive oil
- * 1/4 cup unsalted butter, divided
- * 1/2 cup white wine (optional; see note)
- * Juice and zest of 1 lemon
- * 1/4 cup chopped fresh parsley
- * Salt and black pepper to taste
Instructions
- 1. (Optional step) Peel your shrimp and add the shells to a saucepan with the white wine. Bring to a simmer and cook for 5-10 minutes. Strain the liquid and set aside. If you choose not to use the shrimp peels, skip this step. You will add the white wine later in the recipe.
- 2. Bring a large pot of salted water to a boil. If using angel hair, wait until you are closer to the end of the recipe to put it in the boiling water as it only takes about 2 minutes to cook. Reserve some pasta water for later use.
- 3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- 4. Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.
- 5. Add the white wine that you put aside from step one. If you skipped the optional step in number one, add the white wine at this point.
- 6. Stir in the lemon juice and lemon zest, then add the remaining butter to the skillet. Allow the butter to melt and combine with the other ingredients.
- 7. Add the chopped parsley to the skillet and season with salt and black pepper to taste.
- 8. Return the cooked shrimp to the skillet and toss to coat in the sauce.
- 9. Add the cooked and drained pasta to the skillet and toss until well combined, adding reserved pasta water as needed to achieve a saucy consistency.
- 10. Serve hot, garnished with additional parsley and lemon slices if desired. You could also serve this without pasta and serve on its own or with some hot crunchy garlic bread.
